Protein Pancakes
Protein pancakes are the best recipe to make on a Sunday morning at home! This recipe is super high in protein without sacrificing any of the fluffiness we're all used to! This recipe is also high in fibre which is great for digestive health and keeps you fuller longer! Just top the pancakes with some maple syrup (or sugar-free maple syrup!), chocolate chips or blueberries.
Ingredients
- 1 cup oats
- 1 banana
- 2 eggs
- 1/2 cup egg whites
- 4 teaspoons baking powder
- a pinch of salt
- a pinch of cinnamon
- 1–2 scoops Vanilla Whey protein or Vegan Protein
- 2 tablespoons flax meal
Directions
- Blend everything together on low to medium speed until thoroughly combined.
- A nonstick griddle should be heated to medium-high heat. Make small circles with the batter, about 1/4 cup per pancake. If desired, top with blueberries or chocolate chips. Flip and cook for another minute or two on the other side when the edges start to look dry (2-3 minutes).
- Add whatever you want to the top! Syrup, peanut butter, and chocolate chips are my favourites.
